Vegetable Tikki Recipe

 Vegetable tikkis are delicious and versatile snacks made with a mixture of vegetables, spices, and binding agents. Here's a basic recipe to make vegetable tikkis:



Ingredients:

2 cups mixed vegetables (potatoes, carrots, peas, beans, cauliflower, etc.), boiled and mashed

1/2 cup bread crumbs

2 tablespoons finely chopped coriander leaves

1 tablespoon finely chopped green chilies (adjust according to taste)

1 teaspoon ginger-garlic paste

1 teaspoon garam masala powder

1 teaspoon chaat masala

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder

Salt to taste

Oil for shallow frying

Optional Ingredients:

1/4 cup grated paneer (Indian cottage cheese)

2 tablespoons corn kernels (boiled)

2 tablespoons finely chopped onions

2 tablespoons finely chopped capsicum (bell pepper)


Instructions:

In a large mixing bowl, combine the mashed vegetables, bread crumbs, coriander leaves, green chilies, ginger-garlic paste, garam masala powder, chaat masala, turmeric powder, red chili powder, and salt. Mix well to form a uniform mixture.


If using any optional ingredients like paneer, corn kernels, onions, or capsicum, add them to the mixture and combine thoroughly.


Divide the mixture into equal-sized portions and shape them into flat, round tikkis or patties.


Heat a non-stick pan or griddle and add a little oil for shallow frying.


Once the oil is hot, carefully place the tikkis on the pan, leaving some space between each. You may need to do this in batches depending on the size of your pan.


Cook the tikkis on medium heat until the bottom side turns golden brown and crispy. This should take about 3-4 minutes.


Flip the tikkis using a spatula and cook the other side until it becomes golden brown and crispy as well.


Once both sides are evenly cooked and crisp, remove the tikkis from the pan and place them on a plate lined with kitchen paper towels to absorb any excess oil.


Repeat the process with the remaining tikkis, adding more oil to the pan if necessary.


Serve the vegetable tikkis hot with green chutney, tamarind chutney, or tomato ketchup. They can also be served with bread slices or burger buns as a sandwich or burger filling.
