Chole Bhature Recipe

 Chole Bhature is a popular North Indian dish consisting of spicy chickpea curry (chole) served with deep-fried bread (bhature). Here's a recipe to make both the chole and the bhature:




Ingredients for Chole:

2 cups dried chickpeas (soaked overnight)

2 medium onions, finely chopped

3 medium tomatoes, finely chopped

2-3 green chilies, slit

1 tablespoon ginger-garlic paste

2 teaspoons cumin seeds

1 teaspoon turmeric powder

1 tablespoon coriander powder

1 tablespoon garam masala

1 teaspoon red chili powder

1 teaspoon dried mango powder (amchur)

Salt to taste

2 tablespoons cooking oil

Fresh coriander leaves for garnish


Ingredients for Bhature:

2 cups all-purpose flour (maida)

1/4 cup semolina (sooji)

1/2 cup yogurt

1 teaspoon sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

Salt to taste

Water, as needed

Oil for deep frying


Instructions:

For Chole:

Drain the soaked chickpeas and rinse them thoroughly.

In a pressure cooker, add the chickpeas along with enough water to cover them. Cook until they are soft and tender. This usually takes about 4-5 whistles on medium heat.

Heat oil in a separate pan. Add cumin seeds and let them crackle.

Add chopped onions and sauté until they turn golden brown.

Add ginger-garlic paste and green chilies. Sauté for a minute.

Add chopped tomatoes and cook until they turn soft and oil starts to separate.

Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.

Add the cooked chickpeas along with some water (if needed) to adjust the consistency of the gravy.

Let it simmer for 10-15 minutes on low heat. Add garam masala and dried mango powder. Mix well.

Garnish with chopped coriander leaves.


For Bhature:

In a mixing bowl, combine all-purpose flour, semolina, sugar, baking powder, baking soda, and salt.

Add yogurt and mix well.

Knead the mixture into a soft dough. Add water if needed. Let the dough rest for 2 hours, covered with a damp cloth.

After 2 hours, divide the dough into small balls.

Roll out each ball into a small circle using a rolling pin.

Heat oil in a deep frying pan. Once the oil is hot, carefully slide in the rolled-out dough.

Fry until both sides are golden brown and puffed up.

Remove from oil and drain excess oil on paper towels.

Serve the hot chole with freshly fried bhature. You can also serve it with sliced onions, lemon wedges, and pickle on the side. Enjoy your homemade Chole Bhature!
